Job Description



As Executive Chef, you are the most senior leader of the Culinary department, responsible for the day to day operations and strategic direction of our luxury resort’s culinary offerings. Reporting to the Director of Food and Beverage, you will lead a talented team of food & beverage professionals in a luxury resort environment while fostering a culture of excellence. 

What you will be doing:

Reporting to the Executive Chef, responsibilities and essential job functions include but are not limited to the following:

  • Consistently offer professional, friendly and proactive guest service while supporting fellow Colleagues
  • Manage all Kitchens in the absence of the Executive Chef
  • Create all food menus with the Chef De Cuisines with guidance of the Executive Chef
  • Complete daily market lists to ensure quality food ordering while maintaining budgeted costs
  • Be aware of all financial goals; ensure recipes are accurately costed and food cost is reviewed regularly
  • Meet with Storekeepers to ensure quality & par levels are maintained
  • Interact closely with the Catering department to assist in function menu co-ordination and meet with clients as required
  • Conduct daily shift briefings with all Chef de Cuisine
  • Ensure all kitchen Colleagues are aware of standards and expectations
  • Liaise daily with Outlet Managers and Chef de Cuisines to keep open lines of communication regarding guest feedback
  • Balance operational, administrative and Colleague needs
  • Ensure proper staffing and scheduling in accordance with productivity, budgeted guidelines and Watson standards
  • Ensure the cleanliness and maintenance of all work areas, utensils, and equipment through proper training, Health & Safety procedures and Planet 21 initiatives
  • To follow all safety and sanitation policies when handling food and beverage, achieve all ECOSure Standards
  • Support the Chef de Cuisines in completing all Talent and Culture policies, procedures and standards
  • Follow kitchen policies, procedures and service standards
  • Other duties as assigned

Qualifications



Your experience and skills include:

  • Previous culinary leadership experience in a high-end and large volume establishment required
  • Journeyman’s papers or international equivalent required
  • Diploma Certification in a Culinary discipline an asset
  • Proven track record of cost control including food, equipment, labor and wastage to meet the goals and the hotel’s financial goals
  • Computer literate in Microsoft Office applications required
  • Knowledgeable in Birchstreet, Labor Tool, Avero and Timesaver required 
  • Strong interpersonal and problem solving abilities
  • Highly responsible & reliable
  • Ability to work well under pressure in a fast paced environment
  • Ability to work cohesively as part of a team
  • Ability to focus attention on guest needs, remaining calm and courteous at all times
  • Experience in a Unionized hotel

Physical Aspects of Position (include but are not limited to):

  • Constant standing and walking throughout shift
  • Frequent lifting and carrying up to 50 lbs
  • Occasional kneeling, pushing, pulling
  • Occasional ascending or descending stairs and ramps

Additional Information



Salary Range $111,900 - $120,000

Visa Requirements:  Must be legally eligible to work in the United States. The hotel is unable to assist candidates in obtaining U.S. work authorization.
