Exciting times ahead here at   Aqua Restaurant Group , as we are opening a dual new restaurant in NYC this year - the biggest restaurant opening of 2024 in The Big Apple   With the Italian fleur, we will be opening a restaurant with the freshest produce from Italy, vibrant & buzzy atmosphere with live DJs in the evening & weekend brunches as well as a Japanese restaurant with lots of cocktail choices   If you or someone you know, are looking to join the restaurant scene with us in NYC, we would love to hear from you!

PRIMARY OBJECTIVE OF POSITION

To assist the Executive Head and Senior Sous Chef, in the supervision of kitchen production, and to participate in the food production. Ensures that the function provides the highest food quality consistent with cost control and profitability margins; hence maximise guest satisfaction and food profitability. All work is carried out in line with aqua's guidelines, the departmental business plan, and aqua London's corporate guidelines, and service concepts.

TASKS, DUTIES AND RESPONSIBILITIES

 

TO ASSIST THE EXECUTIVE HEAD CHEF AND PARTICIPATE IN PRODUCTION TO ENSURE FOOD OPERATIONS PROVIDE THE HIGHEST FOOD QUALITY

 

  • Ensures the highest food quality appropriate to the market by assisting the Executive Head Chef in all areas of kitchen operations
  • Adheres to aqua standards of food quality, preparation, recipes, and presentation
  • Ensures proper staffing and adequate supplies for all stations
  • Supervises the proper set-up of each item on menus and insures their readiness
  • Oversees the seasonings, portions, and appearance of food service in the operation
  • Stores unused food properly to minimise waste and maximise quality
  • Assists in budgetary and payroll expense control as required
  • Works closely with Chefs to ensure correct preparation and delivery times are kept and food quality is maintained
  • Assists Head Chef in checking and ordering fresh products and dry storage items required by kitchen
  • Manage staff in an open and approachable manner to assist in maximising staff retention
  • Manage the inductions of new staff and on-the-job training for existing staff according to company standards

 

ACCOUNTABILITY

 

  • Actively participate in assisting to achieve departmental goals and objectives and carry out assigned work by H.O.Ds
  • Actively engage in your own personal development to benefit the business and improve your personal skills - probationary period reviews, annual appraisals, attending training and development
  • Actively participate to ensure that Staff Handbook is adhered to at all
  • Actively participate in weekly/monthly departmental meetings and any other meetings required to
  • Actively participate in addressing complaints and resolving
  • Deputise in the absence of the Senior Chef Tearn

 

HEALTH AND SAFETY

 

  • Ensures that all potential and real hazards are reported and reduced immediately
  • Ensures that employees work in a safe manner that does not harm or injure self or others
  • Anticipates possible and probable hazards and conditions and either corrects them or takes action to prevent them from happening
  • Maintains a clean, orderly, safe and hygienic work environment
  • Adheres to all health, sanitation and food safety legislation and regulations, and makes sure all staff adheres to these
  • Ensure cleaning and Health and Safety check list are signed off on daily
  • Checks that the highest standards of personal hygiene, dress, appropriate uniform, appearance, and conduct is maintained by all employees in the department
  • Ensure that all accidents/incidents are dealt with promptly and sufficiently

 

GENERAL DUTIES:

 

  • Attend any meeting or training session as required by Management
  • Ensures that emergency procedures are practised and enforced to provide for the security and safety of guests and employees
  • Is conversant and complies with:
    • The company fire and health and safety procedures
    • The company security procedures
    • The property facilities
    • Licensing regulations
    • Operation standards and departmental procedures
